Beef Yakhni Pulao Recipe

INGREDIENTS :
  1. Beef with bone : 1.5 kg
  2. Rice : 1 kg
  3. Garlic cloves
  4. Ginger a piece
  5. Ginger paste
  6. Garlic paste
  7. Salt
  8. Green chills 4 to 5
  9. Red chili powder 1 tablespoon
  10. Bay leaf
  11. Coriander seeds 2 tbls
  12. Fenel seeds 2 tbls
  13. Whole spices ( black pepper corns , cumin seeds , Cinnamon stick, cloves , black cardamom, green cardamoms.
  14. Onions 4 finely sliced
  15. Tomato 1
  16. Thick Greek yougrt
  17. Oil

Wash the rice and soaked for 2 hours.

Yakhni Preparation:

Coriander seeds 2 table spoons fennel seeds 2 table spoons mix together add in a blender and blend a roughly ground mixture.in a pressure cooker add beef coriander seeds and fennel seeds roughly ground mixture , whole spices , garlic cloves 12 to 13 (for best results do not peel garlic skin) , ginger a piece , one onion cut it into 4 pieces , tomato 1 , salt then add a good amount of water and pressure it until beef is full tender . When yakhni is ready strain the yakhni remove the spices mixture separate the beef and yakhni stock. In another big pot add 1 cup oil when oil becomes hot add 2 medium sized thin sliced onions saute for a minute until onions color becomes transparent then add ginger and garlic paste few drops of water keep stir then add few more whole spices black cardamoms green cardamoms cumin seeds cloves bay leaf , red chili powder 1 tea spoon. Stir 5 minutes then add beef mix beef with this masala for few minutes then add pulao yakhni (stock) mix all nice then add 1.5 cups thick greek yogurt wait for boil when it’s starts bubbling turn off the heat . Add soaked rice in it turn on flame add salt ( salt must be little more in taste then it’s gonna  be perfect on rice ) …. when the water is dry sprinkle 4 to 5 green chills on the top and cover it with lid let it Neal (dam ) for 10 to 15 minutes. Served with salad and raita.  ​
